100g Oat Pantry Cherry Bakewell Porridge
240ml plant milk
50g gluten free, plant based digestives
2 tsp melted coconut oil
17g or 1 tbsp plant based cream cheese
150g plant based Greek yoghurt
1 tsp maple syrup
1 tsp sugar free cherry jam
1 gluten free, plant based digestive
Method
In a large bowl mix together our Oat Pantry Cherry Bakewell Porridge and plant milk and set overnight in the fridge or for at least four hours. In the morning prepare the layers.
With a pestle and mortar crush the digestives until fine and crumbly, then mix in melted coconut oil with a fork. Sprinkle the mixture across the base of two containers. Top with the overnight oats.
Mix together the cheesecake topping ingredients in a bowl with a balloon whisk until there are no lumps. Spoon the mixture on top of the oats. Garnish with cherry jam and another sprinkle of crushed digestives. Enjoy immediately.
