Ingredients checklist

Use our checklist to tick off each ingredient in preparation for cooking.

40g Jammy Doughnut Porridge Oats

1 tsp maple syrup

1 egg or chia egg (1 tbsp of chia seeds mixed with 3 tbsp of water - let it sit for 15-20 mins)

100g plain yoghurt of your choice

Homemade raspberry chia jam (see method below) or 1 tbsp raspberry jam

Cinnamon sugar mixture, for topping (1 tsp coconut sugar + 1/4 tsp ground cinnamon)

A little oil or butter, for greasing

Method

Preheat your oven to 200°C / fan 180°C / gas 6.

If using a chia egg, mix 1 tbsp chia seeds with 3 tbsp water and leave to sit for 15–20 minutes, until thickened.

Add the Jammy Doughnut Porridge Oats, maple syrup, egg or chia egg, and plain yoghurt to a bowl. Mix until fully combined.

Lightly grease a small ovenproof dish.

05.

Pour half of the baked oats mixture into the dish.

Add a spoonful of homemade raspberry chia jam (to make this add 30g frozen raspberries, 1 tsp water, 1/2 tsp chia seeds to a small microwave bowl, microwave for 30 seconds and then mash into a jam-like consistency), strawberry jam, or raspberry jam into the centre of the mixture.

Top with the remaining baked oats mixture, making sure the jam is covered.

08.

Sprinkle over your cinnamon sugar mixture.

09.

Bake for 25–30 minutes, or until the oats are golden, browned on top, and cooked through.

10.

Leave to cool slightly before digging in — the jammy middle will be hot!
